Ingredients
Gingerbread Loaf
- 6 tablespoons melted butter
- 2 large eggs
- ½ cup granulated sugar
- ⅓ cup molasses
- ½ cup vanilla yogurt
- ¼ cup pumpkin puree
- 1½ cup all purpose flour
- 1½ teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
Maple Glaze
- 1 cup powdered sugar
- 1 tablespoon milk or heavy cream
- 1-2 tablespoons maple syrup
Instructions
Preheat your oven to 350°F and grease a loaf pan. Add parchment paper for easy removal from the loaf pan.
In the bowl of an electric mixer, add the butter, sugar, molasses, eggs, yogurt, and pumpkin puree. Mix until well combined.
If you do not have a mixer, you may easily do this by hand with a whisk.
Add the flour, baking powder, cinnamon, nutmeg, and salt to the mixer and whisk until fully combined.
Pour batter into the greased loaf pan.
Bake in your preheated oven for 40 minutes, or until the loaf is done and a toothpick inserted in the middle comes out clean.
Let the loaf cool for 5-10 minutes.
In a small bowl, whisk your glaze ingredients. You might need to use a hand held electric mixer to get all of the lumps out and make a smooth glaze.
Pour the glaze over the cooled gingerbread loaf and enjoy!
Notes
Let the loaf cool before icing it so the glaze will harden on top.
