Two weeks ago, my mom read about a town a few hours away, where the people were living in tents due to a recent hurricane. A church group was asking for cookie donations they could deliver to the area so the affected people could at least take part in some aspect of Christmas fun. Of coursewe had to help, and we made the following:

Vegan Mexican Wedding Cookies (2)Katie’s Grandma’s Mexican Wedding Cookies
(veganized)

Ingredients:
1 cup full-fatbutter-type spread (we used Earth Balance)
1/2 cup powered sugar
1 teaspoon vanilla extract
2 cups ap flour
1/2 cup finely choppedwalnuts
Powdered sugar, for rolling

Preheat the oven to 325 degrees. Mix the margarine, the 1/2 cup powdered sugar, and the vanilla in a medium bowl. Combine the flour and pecans in a separate bowl. Then combine the contents of the two bowls. Shape dough into 1 inch balls and place on an ungreased baking sheet. Bake for 20 to 25 minutes until lightly browned. Roll the warm cookies in powdered sugar, then cool on a wire rack.

    i think it’s great you delivered cookies to the homeless. i’m sure they appreciated it.

    my mom and i baked cookies for nursing home residents. i think they just love seeing people who care about them.

    it’s such a good feeling!!

    Oh, Wedding Cake cookies, my favorite and a Christmas treat for me. Except I usually buy them from the store, however I didn’t get any this year since the company that makes them went out of business temporarily. These are on the menu for next year.

    Hopefully all the cookies that got delivered to the town made it feel a bit more like Christmas for them.

    I love those snowman cookies! They are so cute looking.

    I have volunteered at a soup kitchen for homeless people, they appreciate the old, stale food provided by the grocery stores, so I am sure they absolutely loved freshly baked cookies.

    Your latest post has a lot more substance than mine…

    You honestly are terrific! 😀 Helping out by making cookies is inspiring, and even though things aren’t as well as they hoped I’m sure cookies brought smiles to everyone. So sweet!!

    I made mexican wedding cookies this christmas as well. I added in some lime zest and juice(in place of vanilla) and it really punched em up 😉

    P.S. I really support your cause here. The homeless are such a vulnerable population and the way our country treats them is tragic. So many are struck by mental illness and drug addiction and have been isolated due to their illness. They are worthy and capable of receiving love and I’m SO thrilled there are people like you and your family who take the time to provide it!
