A Reuben Sandwich is a MUST have for us the day after St. Patrick’s Day however this easy Reuben Sandwich recipe is perfect for enjoying all year long! Rye bread loaded up with corned beef, Swiss cheese, tangy Thousand Island dressing and sauerkraut! This is the BEST Reuben Sandwich Recipe ever!
Reuben Sandwich Recipe
After St. Patrick’s Day we always have left over corned beef and cabbage. I purposely make extra corned beef so we can have Reuben Sandwiches the next night for dinner.
If you are making Reuben Sandwiches as a week night meal not the day after St. Patrick’s Day then you can easily toss the corned beef in the crock pot itself with out the veggies and let it cook all day until dinner time when you will enjoy a delicious Reuben Sandwich.

What is a Reuben Sandwich?
A Classic Reuben Sandwich is made with rye bread, corned beef, Swiss cheese, sauerkraut and Thousand Island dressing (or Russian dressing if you prefer). The best corned beef to use is homemade corned beef in the crockpot, but you can use deli corned beef also. Just ask the deli to slice the corned beef thick for you.
What goes on a Reuben Sandwich?
The ingredients are simple for a Reuben sandwich, corned beef, rye bread, Swiss cheese, thousand Island or Russian dressing and sauerkraut.
Best Bread for A Reuben
You can use any rye bread when you are making Reubens. If I have Pumpernickel rye on hand then I will use that, I LOVE using Marble rye bread. However normally we use light rye bread because it is easiest for me to find in the stores and it is what the kids prefer.
What to serve with reuben sandwiches
There are a lot of things that you can serve with a Reuben Sandwich, we stick to our normal go to sandwich side dish recipes including sweet potato fries, homemade potato chips, pasta salad, coleslaw and in our house a dill pickle on the side is a must!
There are also many soup recipes that go with a Reuben. The best soups to pair with Reubens are a creamy soup like potato soup or cheddar broccoli soup. I also like pairing it with French onion soup or Bacon cauliflower soup.
How to Make Thousand Island Dressing
If you do not have Thousand Island dressing at home, it is super easy to make!
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons sweet relish
- 1/4 teaspoon onion powder
- Dash of Worcestershire sauce
Add all of the ingredients in a bowl and mix until combined.
Reuben Sandwich Ingredients
- 12 ounces Corned Beef
- 1/2 cup Thousand Island dressing
- 6 slices Swiss cheese
- 6 slices Rye bread
- 1 cup Sauerkraut (refrigerated or jarred)
How to Make Reuben Sandwich
Preheat oven to 350.
Cook corned beef in crock pot, if you do not have any left overs to use. Slice your corned beef thick when you are cutting it.
Using the toaster, toast all of the rye bread to a medium toast. I have a 4 slice toaster that makes my life so much easier.
While you are toasting the bread, squeeze the sauerkraut so there is no liquid in it.
Once all the bread is toasted, lay 3 pieces flat on a baking sheet.
Layer each piece of rye bread with corned beef, sauerkraut and then 2 pieces of Swiss cheese and top each sandwich with another piece of toasted rye bread.
Place baking sheet in the oven for about 5 minutes, just until you see the cheese is melted.
Remove the baking sheet out of the oven, take the top off of each sandwich and drizzle Thousand Island dressing on top of the melted Swiss cheese. Place the piece of toasted rye bread back on top to form a sandwich.
Serve with desired sides.
