Yes. But this will depend on how similar your homemade cake mix is to a box mix. With this recipe, we are only using the powder of the mix – not preparing the mix as called for on the box.

How do I store these Red Velvet Cookies?

Since these cookies are topped with cream cheese frosting, they should be stored in the refrigerator and not left out for more than an hour at a time. Store in an airtight container for best results.

Can I substitute and add white chocolate chips instead of frosting?

Yes. White chocolate chips are great with red velvet cookies. But I do encourage you to also try these with dark chocolate chips too.

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use salted butter.

I usually use whatever I have on hand & I really don’t pay too close attention to what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

These days with groceries being more difficult to find – I basically get whatever the store has available at the time and make it work.

How do you make Red Velvet Cake Mix Cookies?

  1. Preheat the oven to 350°F and line 1-2 baking sheets with parchment paper or a silicone mat
  2. In a large mixing bowl, combine cake mix, oil eggs, and flour. If you are making this with a chocolate cake mix and needing to turn it into a red velvet mix, you can also add the food coloring at this time. Mix until just combined.
  3. Use a medium cookie scoop to portion the dough out onto the prepared baking sheets.
  4. Bake for 10-12 min, they will look puffed and will set as they cool.
  5. Cool on the baking sheet for several minutes before transferring to a wire rack to come to room temperature.
  6. Make sure the cookies are completely cooled before adding the frosting.

HOW DO YOU MAKE cream cheese frosting?

  1. Place the room-temperature cream cheese and butter in a large mixing bowl. Beat until whipped together.
  2. Slowly mix in the confectioner’s sugar and vanilla. Once the mixture is no longer powdery, increase the speed and beat well for several minutes, until light and fluffy.

Spread the cream cheese frosting over the top of the cooled cookies and add sprinkles or chopped nuts if desired.

Store in the refrigerator and bring to room temperature before serving.

Can I use a gluten-free flour?

I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a1:1 flour like this oneas I don’t believe it would require additional ingredients that are typically called for when trying to make baked recipes in a gluten-free version. Please come back & tell me how it turned out.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Can these cookies be frozen?

You bet. They are best when frozen before they are frosted. Just make sure to place them in an airtight container and freeze for up to 3 months.

What if I don’t have Red Velvet Cake Mix?

You can substitute the red velvet cake mix with a German chocolate cake mix + 2 tablespoons of flavorless gel food color. It is important that the food color is flavorless though to minimize the not-so-great flavor that tends to overpower recipes when using that quantity.

Can these cookies be adapted for Christmas of Valentine’s Day?

YOU BET! The base recipe would stay the same, simply add your favorite toppings or sprinkles to the cookies to make them more festive for your holiday of choice!

Can I use canned frosting?

Yes – of course you can use canned cream cheese (or any other flavor) frosting if you are tight on time.

  • 1/2 cup oil canola or vegetable
  • 2 eggs
  • 1/3 cup all-purpose flour

Frosting

  • 8 ounces cream cheese room temperature
  • ½ cup butter room temperature
  • cups confectioner’s sugar
  • 1 tsp vanilla extract
