Pepper Jelly Apple Bacon Brie Bites ~ baked phyllo cups filled with brie cheese, sautéed apples flavored with cranberry-pecan Holiday Pepper Jelly topped with crispy bacon.

There are a few things I keep on hand this time of year to make entertaining snacks that are festive, but quick and easy. I always have a variety of cheeses in the fridge and a supply of pre-made phyllo cups and the latest addition is a few jars of pepper jelly.

what are phyllo cups?

Phyllo cups called “phyllo shells” on their package are layers of phyllo dough already formed into cups and couldn’t be easier to use. You can fill them with almost anything and they’re easily found in the grocery store’s freezer section.

Today they serve as a one-bite vessel for creamy brie cheese, tangy Granny Smith apples flavored with Holiday Pepper Jelly and crispy Applewood smoked bacon. It’s a delicious tangy-sweet-salty blend.

What’s Holiday Pepper Jelly?

What’s in these Pepper Jelly Apple Bacon Brie Bites?

  1. bacon
  2. granny smith apple
  3. Holiday Pepper Jelly
  4. box of phyllo cups (shells)
  5. brie cheese

How to make Pepper Jelly Apple Bacon Brie Bites:

Preheat the oven to 375° then line a baking sheet with parchment paper.

Dice the bacon, cook until crisp then remove from the skillet and set aside. Strain all but 1 tablespoon of drippings from the skillet and discard.

Peel, core and finely chop the apple then add it to the skillet. Sauté 4-5 minutes over medium heat or until the apples are tender stirring frequently. Use a wooden spoon or spatula to break up any larger pieces. You want it to look like a chunky applesauce.

Reduce the heat to low then fold the Holiday Pepper Jelly into the apples and cook one minute.

Place the phyllo cups (shells) on the baking sheet then remove the rind from the brie and cut 15 cubes about 1/2″ in size so they fit in the cups.

Add the cheese to the cups then top with about 1 rounded teaspoon of apple filling. Press 1-2 pieces of bacon on top and bake 8-10 minutes or until the cups are lightly golden.

Serve right away alone or as part of a charcuterie or grazing board.

These jellies aren’t just for the holidays. They make entertaining and even mealtime easy and elevated all year. Brush any of the flavors on as a glaze for salmon, chicken or even pork.

Can I make this appetizer ahead of time?

Definitely! Prep the filling and cube the cheese then store in sealed containers in the refrigerator up to a day ahead. Just before serving, add the cheese to the phyllo cups, top with filling and bacon and pop them in the oven.
