This Easy Mexican Cornbread Casserole is Keto, Low Carb, Gluten Free, Grain Free and one of the most comforting and satisfying meals you can make for your family!

With a layer of cornbread as the base, a mixture of spices with organic grass fed ground beef and another layer of cheesy cornbread on top, this scrumptious meal is not only a family friendly one, but simple enough for any busy weeknight! It's also easy to make ahead, freeze and thaw for when life gets crazy and you need dinner on the table fast.

When I think of comfort foods, it always comes back to some form of bread for me. I am an Italian and grew up on carbs, so when I began eating low carb that was certainly something I missed. But it's also made me work really hard to make over traditional recipes and turn them into low carb wonders, like my Grain Free Low Carb Cornbread.

Mexican Cornbread Casserole (Low Carb, Gluten Free)

Ingredients

  • 2 lbs ground beef Butcher Box, organic, grass-fed
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 2 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • chili powder optional
  • 1 cups salsa
  • 2 cups cheddar cheese Mexican-style, shredded

Cornbread Recipe

Instructions

  • Cook the ground beef in a large skillet with the onion and garlic until no longer pink.

  • Add the cumin, salt, pepper, salsa and chili powder if using. Stir together. Set aside.

  • Preheat the oven to 425 degrees F while you make the cornbread.

  • Add all the cornbread ingredients to a stand mixer and blend until well combined.

  • Grease a 9 by 13 baking dish and spread a thin layer, about one third of the cornbread mixture over the bottom of dish.

  • Pour the ground beef mixture over the cornbread layer. Sprinkle 1 cup of the shredded cheese over the meat.

  • Spread the remaining cornbread mixture over the meat and top with remaining shredded cheese.

  • Cover and bake for 15 minutes. Remove cover and bake an additional 15 minutes.

  • Remove from oven and allow to cool slightly for about 10 minutes before serving.

  • Enjoy with toppings: sour cream, jalapenos, salsa, cheese, olives

    I just want to ask does the corn extract leave the corn bread tasting sweet?I used it before and it was sweet with add sweetener.

      I don't feel it does, just adds that corn flavor needed to make it resemble cornbread.

    Hello! Thank you for the delicious recipe. I normally don’t share how I change recipes, but I thought it might be worth mentioning in case there were other people out there hungry to try your recipe, but woefully missing that tasty corn extract.While mine sits in the amazon cart, I decided to add a tablespoon of diced green chiles (from a can), a tsp of cumin and a dash of garlic salt. It’s baking in the oven and I’m crossing my fingers that it comes close to the delicious corn flavored version. .

    Help, please! The Amazon link here for the Corn Extract is different then the link for your recommended corn extract to use in your other delicious sounding recipe "Grain Free Low Carb Cheesy CornBread" . One is $19.95 and the other is $30. I don't mind the cost but I sure want to buy the best tasting one and the one you'd prefer using, being the expert creator that you are. Also, the measurements are different in each recipe.
    I have both in my cart awaiting your suggestion!

      I found the cheaper version for those who didn't want to spend the money on the more expensive one. I think either will work great. The cornbread is slightly adapted in this casserole recipe because it doesn't need to be as stiff as holding a piece of cornbread in my regular recipe. I simply added more liquid to create a softer texture in this cornbread casserole.

    Several of your recipes have the nutrition info serving size as "1 serving" or even "1 g". Why do you do that?

      Recipe plug in issue which defaulted all to 1 gram. I'm manually working on fixing all of them.

    Wouldn't milk vs. heavy cream change the carb count for this recipe since milk is much higher in carbs? Which milk product was used to arrive at nutrition facts for this recipe? Thank you! Look forward to trying this out. It looks great!

      I used coconut milk in my original cornbread recipe and in this casserole I used heavy cream. The total carb count is 10 grams for using coconut milk instead of heavy cream.

    Low carb recipes are great for those with diabetes (and those who don't have the disease as well), however, the fat content is a problem for those with other disease like me (pancreatic enzyme insufficiency). I look at a lot of low carb recipes and the fat content for most of these is far too high. Why does the fat content increase to such high levels when carbs are cut back on? I wish I could try this casserole (and others too), but I cannot due to having issues with too few enzymes. Can you direct me to recipes with lower fat content and lower carbs?

      You might be able to lower the fat using ground turkey instead of ground beef. Coconut flour is high fat and for low carb I mostly use it because my son has a tree nut allergy and almond flour can't be used in my home.

    Hi, I was wondering If you used Cow's Milk or Cream(would that be heavy cream or whipping cream) for this Recipe. and can you use Half and Half for this Recipe?

      I've made the cornbread using all milk, using all cream and also trying it with Half & Half. They all work well and taste good. I prefer the heavy cream which adds the most moistness to the cornbread.

      It's just like vanilla extract but corn extract provides that flavor that adding corn would do for a corn bread but since it's high carb I didn't want to add any corn to the cornbread, just wanted that traditional taste of it. http://amzn.to/2hKMnU7

      Hello! Just tried this recipe. Quite tasty. Kids loved it. I did not add the stevia because we don’t care for sweet cornbread. However, it was still a bit sweet. Curious if you think it was the coconut flower or the corn extract that gave the sweet taste.
