Trust me. I know what it’s like. You want to serve a fun and festive Halloween dinner for your family, or throw a party for your friends. And either you or those at your table need some healthier and allergen-friendly options. You spend an hour on Pinterest only to come up empty. The recipes are unhealthy and full of gluten and other foods you can’t eat.

All of the Halloween pasta dishes on Pinterest are colored with food dyes, which are known to be harmful. The Center for Science in the Public Interest has published studies showing food dyes to cause tumors, hyperactivity, and allergies. Do you really want to add those toxic drops to the food that your family is going to eat?

Especially when there are so many all-natural options out there! God has given us a rainbow of whole foods to eat. No artificial dyes needed!

There are so many vegan cheese options now, and more and more mainstream grocery stores are carrying them. You could even serve these for a Monster style party too!

When eating any kind of edamame or soy product, always-always-always go with organic. Soy crops are some of the most heavily pesticide-sprayed crops. I personally choose to only eat soy occasionally and Explore Cuisine is always my go-to. They are Non-GMO Project Certified, USDA Certified Organic, Certified Gluten Free, Vegan, and U Parve (Kosher). Take the time to read your labels on your food choices. Trust me, it’s worth it.

Our family prefers bison over ground beef. Regardless, make sure your meat choices are free-range, grass-fed, and free of hormones and antibiotics.

Oh and PS – don’t forget to call the pasta sauce “blood.” Cuz it’s that time of year!

Ingredients

  • 1BoxEdamame Spaghettigluten free
  • 1BoxBlack Bean Spaghettigluten free
  • 2Packs or PoundsGrass-Fed All-Natural Ground Bison or Beef
  • 1/4CupGluten Free Breadcrumbs
  • 1TBSPAmore Italian Seasoning
  • 6-8Cut Sliced Olives
  • 3-4Cherry Sized Mozzarella or Vegan Mozzarella Balls
  • 1JarOrganic Pasta Sauce
  • 1DrizzleExtra Virgin Olive Oil

Instructions

  1. Preheat oven to 400 degrees.

  2. In a medium-sizedbowl, mix together ground meat, breadcrumbs, and Italian seasoning.

  3. Roll into 6-8 meatballs.

  4. Place meatballs on a baking tray covered with parchment paper (or baking spray).

  5. Bake meatballs for 15 minutes.

  6. In the meantime, bring two large pots of water to a boil.

  7. Look at the time to cook the pasta. Normally, legumes cook shorter than traditional pasta. Also, watch for the overcook as is standard when making a bean-based pasta.

  8. At about the time the meatballs are finished with their 15 minutes of cooking, place each color pasta in a separate pot of boiling water.

  9. Take the meatballs out of the oven and add the half a slice of mozzarella (or vegan) cheese eyeball. Then top with an olive slice.

  10. Place the meatballs back in the oven for another 5-10 minutes until the cheese is melted.

  11. Place the jar of pasta sauce in a medium-sized pot on the stovetop and heat up.

  12. Meanwhile, when the pasta is finished cooking, drain and place in a bowl, mixed together. Drizzle with a little extra virgin olive oil to keep moist.

  13. Pour pasta sauce over the pasta, and top with eyeball meatballs.
