Ahh Memorial Day Weekend. The kickoff to summer – even though the weather doesn’t care what the date is! Since we don’t own a lot of decorations, and I don’t consider myself too crafty, it’s no surprise that I tend to embrace natural food and decor when it comes to holiday – hence how flag waffles were born – an ideal Memorial Day breakfast!

These red, white, and blue breakfast yogurt flag waffles – the perfect patriotic breakfast idea to start off any holiday are actually one of my early recipesthat desperately needed an update with a recipe and better photos.

Flag Waffle Toppings

When I whipped these up again recently, I remembered why I liked that post so much – these waffles are delicious. And I love that they’re a healthier breakfast option that will fill you up for a while.

I used plain Greek yogurt as a canvas of sorts. You don’t have to use Greek yogurt and it doesn’t have to be plain. Coconut or vanilla yogurt would be fine. Since the jam and berries are sweet, however, I thought the plain yogurt was just right.

For the red flag stripes, I used my homemade strawberry thyme jam. You can use any red jam or jelly – strawberry, raspberry, cherry, pomegranate, or red currant!

And then just fresh blueberries (frozen would be ok) to mimic the stars portion of the flag! It’s blueberry season right now (see what’s in season in spring), so fresh are perfect! Talk about a super simple but secretly kind of gourmet breakfast!

Red, White, & Blue Foods

While I don’t go all out on the decorations, I think having some fun ideas for red, white, and blue patriotic food + decor to serve is a fun and fairly easy way to get into the spirit of things!

Strawberries and blueberries are the obvious options for these dishes, but there are certainly other foods that work well in these colorful recipes. For red, think red bell peppers, cherries, raspberries, dried cranberries, etc.

Naturally Blue Food

Blue is trickier, but blue corn chips (perhaps with this strawberry cilantro salsa), blue potatoes (I see them most often as mini potatoes), and even bleu cheese (though not my favorite, it’s certainly festive).

And your food doesn’t have to do all the heavy lifting for color. Remember you can use plates and napkins to round out a colorful spread.

Can You Use Frozen Waffles?

Totally! I love making homemade waffles and with a family member on a Gluten Free diet, it’s easier to make them ourselves, but using a frozen waffles (even frozen homemade waffles) is a GREAT idea if you’re serving a crowd or have a busy schedule.

Just toast as usual and top with yogurt, jam, and berries!

PATRIOTIC FLAG WAFFLES

I like having a little fun with food to celebrate a holiday. I started smothering my waffles in yogurt for added protein and then blueberries for a bit of sweet. When it was time for Memorial Day and 4th of July breakfasts a while ago, I immediately thought of this combo with the addition of a little strawberry jam. Now it's a yearly tradition to have patriotic waffles every summer!

Ingredients

  • 2 eggs
  • 2 cups flour
  • 1 ¾ cups milk nonfat is fine
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup chopped walnuts
  • toppings: Greek yogurt strawberry jam (homemade recipe here), and fresh blueberries

Instructions

  • Preheat waffle iron to highest setting.

  • In a bowl, beat eggs. Add remaining ingredients. Stir until just combined. Let sit 2-3 minutes. Stir again.

  • Ladle heaping ¼ cup spoonfuls onto hot waffle iron, spreading batter around to evenly coat waffle form. Cook to desired doneness.

  • Top with greek yogurt, jam, and berries.
