The weather is heating up here in Central Ohio, and that means my weeknight dinner formula is back in action. With our busy schedule, it just makes sense to already have a loose idea in place for dinner: grilled protein + a couple of quick and easy sides like fresh fruit, simple salads, roasted potatoes and/or veggies.

We try to rotate sides often — emphasis on the “try” here… If my kids had it their way, it would be potatoes and more potatoes every night of the week. And honestly, I can’t say that I totally disagree with them. I love them because they’re super versatile, a blank canvas to be mashed, baked, smashed, fried, or roasted and then seasoned to perfection. But also? Potatoes are inexpensive, which makes my wallet happy. Because feeding teenagers is not for sissies!

When it comes to quick and easy, roasted potatoes are the way to go — so I’ve amassed quite the arsenal of roasted potato recipes. But of all of them, these Crispy Roasted Garlic Ranch Potatoes reign king with my kids. I’ve taken the classic Hidden Valley Ranch potatoes recipe and tweaked it just slightly to add a touch of nutty garlic flavor, as well as a bit of freshness with some chopped parsley.

Seriously, it makes using their secret blend of herbs and spices in recipes (like these ranch roasted potatoes) SO simple. Or you can also use it as a tabletop seasoning on fries, veggies, and other savory snacks. Like popcorn — my girls adore sprinkling it over their homemade popcorn. ALL the ranch seasoning, please!

We pick up these BIG containers at Sam’s Club, along with many of our other pantry staples. Shopping at Sam’s Club is a no brainer for my larger-than-average family, but really it just makes good sense (or cents, ha!) for smaller families looking to stretch their dollars, too.

Maybe you won’t use up a pound of spinach before it turns yucky, but you’ll definitely get your money’s worth out of things like cooking oils, spices, peanut butter, dried pasta, and so on. And who knows? You may even use up all of that spinach if you get creative with a little Hidden Valley Ranch!

Either way, I highly recommend trying out the Scan and Go app or In-Club Pick Up on your next Sam’s Club trip. Both get you in and out in almost no time at all — I am totally in love with these convenient features! No more long checkout lines for me… I just scan everything and checkout from my phone, then head for the exit.

Crispy Roasted Potatoes

Are you ready to try these crispy ranch potatoes? Awesome! But first, crispy is the name of the game here, folks… So if you want crispy roasted potatoes, be sure to scan these tips before trying this recipe.

soak the potatoes — after halving the potatoes, place them in a bowl and cover with cold water. Ideally they should soak for an hour, but often (read almost always) I just let them soak long for as long as it takes for my oven to preheat. Soaking removes some of the starch, and any amount of time at all will help with this.

dry the potatoes — pour the water off in the sink and give the potatoes one last quick rinse. Then dry them well with paper towels or a clean lint-free dishtowel.

preheat your baking sheet in the oven — just set your baking sheet on a rack in the oven when you turn it on to preheat. This is actually a great tip that I use for roasting all types of veggies, because the outside will start caramelizing right away, which gives everything tons of flavor!

leave space between your potatoes — again, this is true for all veggies. Don’t crowd the tray, because your potatoes or veggies will just steam instead of getting crispy and caramelized. Use two baking sheets if necessary!

flip just once — stirring the potatoes frequently only serves to cook them through more quickly without browning. Allow them to brown completely on one side, then flip. I like this a flexible stainless steel spatula for this purpose, because you can really wedge it in under the crispy potatoes if they’re sticking. Extra bonus points if you take the time to lay them out cut side down before putting them in the oven the first time. The cut side always caramelizes more quickly and completely.

Now that we’re established that, let’s a talk about this ranch potatoes recipe. I’ve made it SUPER simple: just remember the number 2… Start with two pounds of small potatoes. I picked up this red, yellow, and blue trio from Sam’s Club — such a fun and tasty choice.

Halve them, and toss them with 2 tablespoons of olive oil, 2 tablespoons of Hidden Valley Ranch Salad Dressing and Seasoning Mix, 2 minced garlic cloves, and salt and pepper to taste. Roast them until crispy, then toss them with 2 tablespoons of chopped fresh parsley. Doesn’t get much easier than this!

Crispy Roasted Garlic Ranch Potatoes

Cook Time: 30 minutes

Total Time: 35 minutes

These easy ranch potatoes are totally one of my favorite roasted potato recipes... Crispy and seasoned to perfection with garlic and ranch seasoning!

Ingredients

  • 2-lbs. baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons Hidden Valley Ranch Seasoning Mix
  • 2 tablespoons chopped fresh parsley
  • salt and freshly ground black pepper, to taste

Instructions

  1. Place the halved potatoes in a bowl of cold water to soak.
  2. Set a baking sheet on the middle rack inside your oven. Then turn the oven on to preheat to 425 degrees.
  3. When the oven is done preheating, pour the water off of the potatoes, give them a quick rinse, then dry them well with paper towels or a lint-free dish towel.
  4. Place the dried potatoes in a medium mixing bowl. Add the olive oil, Hidden Valley Ranch seasoning, and garlic, then toss well to coat.
  5. Remove the hot baking sheet from the oven and immediately turn out the bowl of potatoes onto it. Spread the potatoes out so they have some room to breathe. Bonus points for turning them all cut side down (they'll crisp up more quickly).
  6. Place the baking sheet back in the oven and roast the potatoes for 20 minutes. Using a flexible spatula, flip the potatoes over. Roast for an additional 10 minutes or until the potatoes are golden brown and fork tender.
  7. Season with salt and freshly ground pepper to taste. Toss with fresh chopped parsley, and serve warm.

Notes

Grilled Ranch Potatoes: You can also divide these potatoes into four foil packets and grill them. They'll be less crispy and more tender, but still delicious! Just preheat the grill to medium heat and place the packets directly on the grill. Close the grill coverand cook for 30-35 minutes until tender, turning the packets frequently.
