True story: whenever I’ve had a rough day or week, the one sure fire cure to get me out of a slump is to grab my baker’s mitts and whip up a delicious treat in the kitchen.

Baking has always been my favorite stress reliever, and it sure doesn’t hurt to make something that literally fills the whole house with the most delicious aroma (like these yummy muffins).

So of course when I let the bananas go bad again for the 900th time yesterday, I figured why not take advantage and make some delicious and easy banana muffins?

And the answer is yes!

These chocolate chip banana muffins have truly one of the best flavors I’ve ever tasted in a muffin and are SO easy to make thanks to self rising flour.

Self rising flour makes life easier by combining all-purpose flour, baking soda, and salt in one, with no measuring out individual ingredients.

I’m a huge fan and use self rising flour in my Mom’s Famous Chocolate Chip Cookies, 3-Ingredient Biscuits, 2-Ingredient Pizza Dough, Easy Banana Bread, and of course these yummy Chocolate Chip Banana Muffins.

  • Bananas – The riper, the better, as it will lend a sweeter flavor
  • Self Rising Flour – Makes life easy with no measuring out separate ingredients
  • Sugar – I love to use coconut sugar but feel free to use regular if you prefer
  • Applesauce – I love using applesauce to add moisture in muffins and reduce the amount of sugar
  • Cinnamon and Vanilla – Adds SO much flavor and perfectly compliments bananas
  • Egg – Gives the muffins structure
  • Melted Butter – Adds flavor, moisture, and helps give these muffins the perfect soft and fluffy texture
  • Chocolate Chips – The perfect add-in for these banana muffins! I love using semi-sweet but feel free to use milk or dark.

Tips for Making The Best Cinnamon Sugar Chocolate Chip Banana Muffins with Self Rising Flour

What Is The Secret to Making Moist Muffins?

There are three keys to making moist, delicious banana muffins!

  1. Use moisture adding ingredients such as butter and oil. In the case of these muffins we use melted butter and applesauce which make them nice and moist.
  2. Don’t overmix your batter. With muffins you don’t want to overmix the batter, so stir until JUST combined. It’s actually okay to still see a tiny little bit of flour once mixed.
  3. Don’t overbake your muffins. Just like with cookies, you want to take your muffins out when they are right on the verge of being done, as they will continue to cook for a few minutes while cooling in the pan. (see below)

How Do I Know When Banana Muffins Are Done?

I use two fool-proof methods for checking to see if my banana muffins are done.

  • Toothpick Method– Insert a toothpick into the center of a muffin and if it comes out clean, then your muffins are done.
  • Press Method – If you don’t have a toothpick, you can also gently press on the top of your muffins. If they bounce back up quickly, then they are done. If they don’t, then they still need a few more minutes.

What Are Your Best Tips For Making the Perfect Banana Muffins?

In addition to my tips above, here are a few of my best tips for making the absolute most delicious, best chocolate chip banana muffins.

Use extra ripe bananas – You know those times when you think the bananas are too far gone and just need to be thrown away? Don’t. Use them to make these banana muffins instead. The riper the bananas, the sweeter the baked goods. It’s so weird how it works, but it just does.

Use a cookie scoop – In my early days of baking I would try to pour in my muffin batter and it would make SUCH a mess and took forever. Do yourself a favor and grab these affordable cookie scoops that make scooping out an even amount of batter a total breeze.

Always add extra chocolate chips on top – By now you probably realize that unlike my healthy banana muffins, these banana muffins are more of an indulgent dessert-like muffin, so add some extra chocolate chips on top before baking them. It makes them pretty and extra yummy!

Ingredients

Muffins

  • 1 1/2 cups self-rising flour
  • 1 tsp cinnamon
  • 3 large bananas (mashed)
  • 3/4 sugar or (1/2 cup sugar + 1/4 cup applesauce)*
  • 1 large egg (beaten)
  • 1 tsp vanilla
  • 1/2 cup butter melted
  • 1/2 cup chocolate chips (semi-sweet or dark)

Cinnamon Sugar Topping

  • 1/4 cup sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350 degrees and spray a muffin pan with non-stick cooking spray.
  2. Melt butter in a small microwavable bowl. Set aside to cool.
  3. Combine self rising flour and cinnamon in a large mixing bowl.
  4. In a separate large mixing bowl combine mashed bananas, applesauce, sugar, egg, vanilla, and melted butter and stir until combined.
  5. Next, add 1/2 of the dry ingredients in with the wet ingredients, stir, and then add the other 1/2 until just combined. DO NOT OVER MIX.
  6. Gently fold in 1/2 cup of chocolate chips.
  7. Scoop out batter evenly into a well-sprayed muffin pan using a medium cookie scoop. Fill each muffin tin about 2/3 full.
  8. Next mix together sugar and cinnamon in a bowl for the muffin topping.
  9. Using a spoon lightly sprinkle the cinnamon sugar mixture over each muffin. With a toothpick, swirl throughout the top of the muffin and sprinkle with more mixture, as desired. Top with additional chocolate chips.
  10. Bake in the oven for 12-15 minutes, or until a toothpick comes out clean.
  11. Let your muffins cool for 5 minutes in the pan, before transferring to a cooling rack.Enjoy your delicious banana muffins!

Notes

  • The original recipe used 3/4 cup sugar, but I’ve since adjusted the recipe with a lighter option to use 1/2 cup sugar and 1/4 cup applesauce. It still tastes just as delicious and is better for you!
  • Store leftover muffins in an airtight container for up to 5 days. You can also freeze them in a ziplock bag for up to 3 months.
