These BUFFALO CHICKEN BURGERS are so moist and juicy! They grill up quick and easy for a nice twist on the traditional burger. We top them off with a three ingredient ranch coleslaw. It’s the perfect cool topping to a spicy sandwich!

It’s been awhile since I’ve shared a buffalo chicken recipe with you.
(Okay, writing that sentence made me curious and I went to see how long it had actually been – less than a month ago I shared this buffalo chicken salad. Hahahaha!)
One of the things I LOVE about these burgers is that they turn out super juicy, they are easy to make more or less spicy, and they’re topped off with ranch coleslaw!
The ranch slaw balances out the spice perfectly and adds this cool, crisp topping to the burger. So good!

How to Make:
Add ground chicken, panko bread crumbs, wing sauce, ranch seasoning mix, prepared ranch dressing, and an egg to a mixing bowl and stir well to combine the mixture.

Form into 4 patties and grill for 7 minutes per side, or until a thermometer reaches 165 degree. Top each patty with cheddar cheese about 2 minutes before they’re done.

Place the buffalo chicken burgers on a hamburger bun, top it off with some ranch coleslaw (just coleslaw mix, ranch dressing, and ranch seasoning!), and then give it an extra drizzle of wing sauce.

Helpful Tip!
Spicy vs. Mild
- These sandwiches are what I’d call mildly spicy as written.
- For EXTRA SPICY burgers, use Frank’s Red Hot Sauce rather than mild wing sauce both in the burgers and drizzled on top. You can also add ground cayenne pepper to the meat mixture.
- For MORE MILD burgers, skip the extra drizzle of sauce before serving.
If you believe that blue cheese is the only proper way to make buffalo chicken, please feel free to swap out the ranch dressing!
My family doesn’t like blue cheese, so we always choose ranch. Do what works for you!

Buffalo Chicken Burgers with Ranch Slaw
These buffalo chicken burgers are so moist and juicy! The grill up quick and easy for an easy weeknight dinner, too!

Serves 4 burgers
Ingredients
For the burgers:
- 1 pound ground chicken
- 2/3 cup panko see note
- 1/4 cup wing sauce
- 1 tablespoon ranch seasoning powder
- 1 tablespoon prepared ranch dressing
- 1 large egg
- 4 slices cheddar cheese
- 4 hamburger buns
For the slaw:
- 2 cups coleslaw mix
- 1/4 cup prepared ranch dressing
- 1 tablespoon ranch seasoning powder
Instructions
In a large bowl, combine the chicken, panko, hot sauce, ranch powder, ranch dressing, and egg. Stir to combine thoroughly. Use your hands to form mixture into four patties.
Cook chicken patties on a preheated grill or skillet, six minutes per side or until chicken reaches 165 degrees. Top with sliced cheddar one to two minutes before removing from the grill.
To prepare the ranch slaw, mix together the coleslaw mix, ranch dressing, and ranch powder in a small bowl to combine.
Place the chicken patties on the sandwich buns, top with the ranch slaw, and drizzle with extra hot sauce, if desired.
Tips & Notes:
If you’ll be grilling the chicken burgers, I recommend adding another 1/3 cup of panko to the mixture to help the patties hold together so they won’t fall through the grill grates. If you’re cooking these on a skillet, they should hold up as written just fine.

I just made this for my husband and his friend and it turned out great. I made Rosemary oven baked fries with it. It is definitely a new favorite! I cooked the burgers on my cast iron griddle and melted some Colby over top and toasted the buns so the slaw didn’t wet it all down. Great recipe!

These sound really good. Although I might try pounding out some chicken breasts and deep frying them then coating them with the buffalo sauce. I think that’d be really good to, be like a buffalo wing sandwich. And the ranch coleslaw would be really good on that. Give it a crunchy texture.

making these right now.. they are so runny I think they will run right though the bars on the grill, stuck them in the freezer for a bit.. but seems like I I am going to have to cook them in a pan on the stove.

In the future, you can always add a bit more panko, but I’ve made this recipe just as stated with no problems.
