Another holiday season is upon us.
No, time has not magically fast forwarded to Thanksgiving. The gloriousseason of March Madness! While most of us wouldn’t count this occasion high on the ladder, my husband would beg to differ.
What does that mean around our house? That my husband’s attention span is even smaller than it already is. The conversations we hold become even shorter during game time. So that means I have to talk even quicker. But that still doesn’t guarantee he will listen.Selectivehearing at it’s finest, people.
But to my family, we live and breatheKU basketball and while I love my Jayhawks, the social gathering is whereit’sat. To be more specific, the food spread is whereit’sat! Not much has changed since Super Bowl…
So, these teeny sandwiches are my contribution to the holiday season. They are hand held. Perfect for tiny hands. And perfect so you can hold your beer in the other. It is game day, right?
So, these sliders. I have fallen in love with chicken thighs lately. I tried to tell myself that I like the white meat over the dark, but as my love of burgers has grown, so has my love of chicken thighs. It makes the most tender, juiciest shredded chicken along with some killer burgers. The slightly higher fat content helps all that. Don’t be scared to make the swap, chicken thighs are still not that high in fat but the flavor is incomparable!
The chicken is thrown in a slow cooker and that is where all the magic happens. Let that baby do all the work for you! Throw in a bit of balsamic vinegar, brown sugar, seasonings and mustard for a bit of spice. As the chicken cooks, it seeps into all the nooks and crannies. When the chicken is done, remove from the slow cooker and shred with two forks and throw the meat back into the pool to soak up all the juices. Perfection.
And then the toppings! Think of it like the party hats for the party. Much needed. We have a homemade honey mustard that is sweet, tangy and has a bit of spice. AND onion rings! Thanks to Farm Rich Onion Rings, we keep these babies light. They are super crunchy and could pass as a restaurant ring. Minus the greasy fingers that come with their restaurant counterparts.
Now, I call that a winning bite.

Ingredients
- Chicken:
- 2 pounds boneless, skinless chicken thighs
- 1/4 cup Truvia Brown Sugar (or 1/3 cup regular brown sugar)
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons garlic powder
- 1 1/2 teaspoons paprika
- 1/3 cup balsamic vinegar
- 2 tablespoon dijon mustard
- Honey Mustard:
- 2 tablespoons honey, or more to taste
- 1/2 cup Dijon mustard
- 1 teaspoon salt
- To Serve:
- 8 small Farm Rich Onion Rings
- 8 small slider buns, toasted
- Shredded Cabbage, if desired
Instructions
- Chicken: In a slow cooker, place the chicken thighs then sprinkle with brown sugar, salt, pepper, garlic powder and paprika. In a small bowl, whisk together the vinegar and mustard. Pour over chicken. Place lid on slow cooker and set on low for 4 hours, or until chicken is cooked through.
- Remove chicken from slow cooker and shred with two forks. Place meat back into cooker to soak up all the juices. Place slow cooker on warm, or lowest setting, until ready to serve.
- Honey Mustard: When ready to serve, in a small bowl, whisk together the honey, dijon mustard and salt until combined.
- To Serve: Place meat onto the bottom bun, top with shredded cabbage, onion ring and honey mustard sauce.
