So, do you have any tricks for getting the eggs to peel nicely? No matter what tricks I try my eggs end up looking so ugly. I guess that's okay, since they always taste good. :) These sound delicious-I've never thought of adding horseradish!

Mary, When your eggs are done cooking, pour off the water. Vigorously roll (swirl?) the eggs around in the pan until the shells are cracked/broken. Immediately run cold water into the pan. Let the eggs cool in the water. This is the only way I have found to make peeling boiled eggs easier. I hope it helps. P.S. Horeradish in deviled eggs is so good. Just be very careful, if you use too much it overpowers everything and all you will taste is the horseradish.

When peeling Easter eggs that are cold...I have no clue :(

Just saw this on face book. Take a mason jar (any jar with a lid) fill it half full of water , drop the egg in , put the lid on and shake the shell out of it ! Just like making a co*cktail ! The shell will peel off easily with no damage to the white .

    4. Donna Krone

The mason jar trick works amazingly !!! I will never ever peel another egg any other way

Can you make them ahead of time? A day?
    A few hours?
    They look yummy!

  5. Amber Trautman

I make mine very similarly, although I've never tried the horseradish sauce, sounds interesting! I do instead however put pickles and onions in. They're amazing, every time I make them my kids are standing at the kitchen door begging for the first one.

My family loves deviled eggs year round but they don't care for the horseradish even though we are italian and irish and french. I use my great-great-grandma's recipe and they disappear like crazy. All my friends love them. It's a secret familly recipe that has been passed down for generations.

    1. Doug

      Share great-great grandma's secret....don't just tease us :-)

    2. Doris

So in other words 10 or so people get to taste a great deviled egg because the recipe is "secret"? It's a shame because one day no one is going to pass that recipe along and it will be lost. Sorry, I just think a good recipe should be shared so everyone can enjoy.

In regards to peeling a hard boiled egg . . . When you look at the anatomy of an egg, you'll see that between the shell and the egg-white there are two membranes. If you have fresh eggs, those membranes stick tight to the shell and the egg-white. This makes for an egg what is hard to peel after it is boiled. As the egg gets older, this bond relaxes and the older the egg gets the easier it is to peel after it is boiled. Always assuming you shock the eggs under cold water after the boiling process.
