HOMEMADE BELGIAN WAFFLES RECIPE

In my quest for the perfect Belgian waffle I tested many different versions of the a basic waffle batter. Some with more sugar, less sugar. Some with butter, some with oil. Whipped egg whites versus whole eggs.Belgian Waffle Recipe (2)

IMPORTANT INGREDIENT

In all my tests, the biggest factor that made the waffles go from decent to spectacular was cornstarch. Cornstarch gives that crisp exterior with a fluffy center.

WHAT ARE BELGIUM WAFFLES

Belgian waffles are waffles with a lighter batter and deeper pockets than American waffles.Belgian Waffle Recipe (3)

INGREDIENTS

  • EGGS – The eggs are separated and the egg whites whipped until soft peaks. It is an extra step but so important to a fluffy waffle.
  • UNSALTED BUTTER – I use melted butter that is slightly cooled.
  • SUGAR – In reality most waffles and pancakes aren’t that sweet on their own but they should have some sweetness.
  • FLOUR – All-purpose flour is what we use.
  • CORNSTARCH – The secret ingredient to crisp waffles.
  • BAKING POWDER – Gives them their fluffy texture.
  • SALT – There must be balance in all things. If using salted butter, leave this out.
  • MILK – Whole milk is best to use here.

TOPPINGS

  • Maple Syrup
  • Buttermilk Syrup
  • Whipped Cream
  • Fresh fruit – strawberries, blueberries, bananas, raspberries
  • Nutella
  • Chocolate chips
  • Nuts – pecans or walnuts
  • Peanut butter

How much batter do you put in a Belgian waffle maker? ›

Prefer crisper, darker Belgian waffles? Just increase the browning control setting. The batter: Be sure to pour the batter into the center of the lower grid for evenly shaped waffles and spread it with a heatproof spatula. To ensure the best results, use 3⁄4 cup batter or enough to fill the entire lower grid.

Why are my Belgian waffles not crispy? ›

Not waiting until the iron heats up properly means your waffles will cook, but never achieve that satisfyingly crisp exterior. Overworking the batter will leave your waffles dense and chewy instead of light and airy. And stacking even the most perfect waffles will cause them to become soggy and limp in minutes.

What kind of flour is best for waffles? ›

On the flip side, waffles aren't as flaky-delicate as baked goods, making pastry flour too fine for the job. Good old AP, or all-purpose, flour is where it's at. If you want to sprinkle in a tablespoon or two of buckwheat or rye flour for added nutty heft, go for it.

What is the secret to crispy waffles? ›

Of course, you can substitute whole grain flours like whole wheat or spelt flour, but expect them to be a little denser. Cornstarch is our secret ingredient for making the crispiest waffles. Cornstarch guarantees that the waffles will be perfectly crisp and tender.

What makes Belgian waffles so good? ›

The secret ingredient in Belgian waffles is the pearl sugar, which gives the waffles a unique texture and slight, satisfying crunch. Belgian waffles are also fantastically light, which adds to their perfection. Fun bonus fact: traditional Belgian waffles are usually eaten with your hands, not a fork and knife.

How do you keep Belgian waffles crispy? ›

Other Ways to Keep Waffles from Getting Soggy
  1. Place your waffles on a cooling rack in a low-heat oven (don't stack the waffles on top of each other).
  2. Throw your waffles in a toaster to refresh their crispiness.
  3. Make sure your waffle iron is very hot.

Is it better to let waffle batter sit? ›

Let the batter rest for about 30 minutes.

The resting time allows the batter to thicken and the gluten to relax so you get that really tender and fluffy waffle interior rather than chewy waffles. (Here's a good article on what's happening while batter is resting, if you're curious).

Should waffle batter be thicker than pancake batter? ›

Pancake recipes also include leavening agents. However, certain pancakes will be flatter and resemble crepes. Consistency has to do with how thick the batter is. Waffle batter is thick, and pancake batter is thin.

How do you know when Belgian waffles are done? ›

"These waffles are super crisp on the outside, light as a feather inside and so scrumptious! Avoid removing them from the waffle iron too soon; they should be a golden brown. Enjoy!"

Is it better to make waffles with butter or oil? ›

Butter has a relatively high water content, and vegetable oil or rapeseed oil actually give your waffles a better crisp crust due to their lower water contents, allowing the batter to brown more easily and evenly. Additionally, butter is more prone to burning, since it has a lower smoke point and contains milk solids.

Is baking soda or baking powder better for waffles? ›

We use the two together for the fluffiest, best tasting waffles. The baking powder really does most of the lifting and makes the waffles fluffy, and the baking soda reacts with the buttermilk for tender waffles with a tasty tang (and helps contribute to giving them a little lift, too).

How to spice up Belgian waffles? ›

Cinnamon or Nutmeg: Sprinkle ground cinnamon or nutmeg into the batter to give your waffles a warm and cozy flavor. Citrus Zest: Grate the zest of an orange, lemon, or lime into the batter for a citrusy kick. This adds a bright and refreshing element to your waffles.

Should you let waffle batter rest? ›

Recommended overnight or 2 hr resting – for the tastiest waffles, rest the batter overnight in the fridge or for at least 2 hours. This makes the flour grains absorb the liquid so it makes the inside of the waffles softer.

Why do you let the batter rest when making waffles? ›

The resting time allows the batter to thicken and the gluten to relax so you get that really tender and fluffy waffle interior rather than chewy waffles. (Here's a good article on what's happening while batter is resting, if you're curious).
