Beef and Stout pies are a favourite traditional recipe from the UK. Typically it is made with good cuts of beef, stout, mushrooms and all sorts of good stuff. I’ve modified the recipe to simplify it and make it accessible no matter your budget and of course kids love eating with their hands so even the pickiest eaters will enjoy this one!

I chose to use Guinness because it has such a distinctive flavour that I think works really well, plus its a fab nod towards St. Patrick’s Day and making it a little bit more of a specifically Irish recipe.

These would be great to serve up at any St. Patrick’s Day themed dinner parties! Not only are they delicious but they are pretty cute and easy to eat with just a napkin making them perfect party food.

How to Make Ahead and Store Hand Pies

You can make these pies ahead of time and then freeze until ready to serve.

Assemble the hand pies completely, but do not bake them. Place in a single layer on a sheet pan lined with parchment paper or a silicone baking mat and freeze for at least two hours to ensure they are fully frozen before transferring to freezer bags. It will take about 2-3 hours in the refrigerator for the pies to thaw.

When you are ready to bake the pies, follow the baking instructions until golden brown and heated through.

To store any left over baked pies, cool them completely before placing in an airtight container. I recommend storing the pies in the refrigerator if you are not eating them immediately. They will keep in the fridge for up to 5 days.

When you’re ready to eat them, just place the pies on a baking sheet and put in a 350F oven for about 15-20 minutes or until heated through.

About the Ingredients for Beef and Stout Hand Pies

Beef – You can absolute use steak diced up here instead of the ground beef. Use lean ground or medium ground beef.

Onion – Yellow or white onion.

Potatoes – I like to use yellow potatoes for this dish.

Peas – I use frozen sweet peas. If you like canned, you could use that instead, or fresh peas if you have any.

Stout – I used Guinness out of personal preference but you can swap in your favourite stout.

Seasoning – Dried thyme, worcestershire sauce, salt and pepper provide plenty of rich flavour to the filling.

Pastry – You can use pre-made pastry shells or your own homemade pastry.

Milk – The milk wash encourages browning much like an egg wash, without giving the pastry a yellow shine. You can do an egg wash if you prefer that.

How to Make Beef & Guinness Hand Pies

Yields: 16 Hand pies | Prep time: 10 Minutes | Cook time: 25 Minutes

Ingredients:

  • 1 lb ground beef
  • 1/2 cup onion, finely chopped
  • 2 Medium Sized Potatoes, diced
  • 1/2 tsp dried thyme
  • 1/2 cup sweet peas
  • 1 bottle Guinness Stout
  • 2 tbsp Worcestershire sauce
  • Salt & Pepper, to taste
  • 2 packages of Deep Dish Pastry Shells (4 Shells total) OR your favourite pie pastry recipe doubled.
  • Milk

Directions:

Pre-heat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper or grease with cooking spray and set aside.

In a large skillet over medium-high heat, brown the ground beef.

Drain the fat from the pan, then add in the onion and cook until softened.

Stir in the vegetables, thyme, Guinness, Worcestershire sauce and seasonings then bring to a boil.

Reduce heat and simmer for 7-8 minutes or until vegetables are tender.

Roll out pastry dough and cut out 16 – 5 inch rounds and 16 – 5.5 inch rounds.

Spoon filling onto 5 inch rounds, brushing milk around the edges and cover with the 5.5 inch rounds and press with a fork to seal.

Bake 12-15 minutes until pastry is golden, and serve warm.
